Summer Approacheth, Enjoy This Filling Light Vegan Salad: Waldorf Style

Waldorf Salad

This creamy salad has such great heart healthy vegan ingredients. I’ve lightened it up so they can shine. Have for a light vegan lunch or serve a half portion of it before a nice, lean dinner.

Serves four to eight


2 ripe avocados

1 garlic clove

Juice from 2 lemons

¼ cup water

1 tsp. sea salt

½ tsp. freshly ground pepper

1 Tbsp. extra virgin olive oil

8 cups Italian salad blend

2 cups carrots, chopped

1 medium Granny Smith apple, diced

1 cup chopped walnuts


Blend avocados, garlic, lemon juice, water, salt, pepper, and oil in blender or food processor until combined, set aside.

In a large mixing bowl, add the salad greens, carrots, diced apples, and walnuts. Fold in the reserved dressing with a rubber spatula until all the ingredients are well coated. Serve immediately.
